Artist's Description

The Caper – Capparis spinosa, found growing wild all over the Maltese countryside, is well known in the Mediterranean region for its edible bud (and fruit) marketed under the name of Caper Berry, which is usually consumed pickled. It grows quite freely in the wild countryside especially in rocky regions. Capers are a distinctive ingredient in Southern Italian, Sicilian and Maltese cooking. They are used in Salads, Pizzas, Meat and Fish dishes. Examples of uses in Italian cousine are Chicken Piccata, and Salsa Puttanesca. They are also used in most Fish Sauces and to garnish Fish Dishes. Capers are also used with cold Smoked Salmon, Cured Salmon and occasionally as a substitute for Olives to garnish a Martini.
