Artist's Description

One of my favorite soups since childhood and a traditional one: The dumplings are made with veal cutted as You do for the filling of sausages – very fine consistency. You mix it then with some breadcrumbs, 1 egg (for 250g veal), salt, pepper, herbals like marjoram or parsley, a pinch of nutmeg and then form dumplings with a teaspoon and give it into simmering salted water. Only some minutes and they are ready to take them out of the water and to give them into clear vegetable stock together with some vegetables like carrots, roots, leek, chives, zucchini or whatever You prefer. 250 g veal is perfect quantity for dumplings in a soup for 2 persons
