With the arrival of a kitchen with proper ovens after a long time cooking in reduced circumstance….I feel awakening my old baking habits. The last time I made hot cross buns was 6 years ago. Making bread is something you never forget how to do. The senses remember, the hands know what to feel for, the internal clock knows when its the right time to do the next thing. The nose knows when the baking is done… I made a dozen early this morning, thinking we didn’t really need 24. As soon as they were out of the oven…I realised how silly and short sighted that idea was and prepped the second dozen.
