Artist's Description

Home made fruit pavlova with pineapple, kiwi fruit, peaches and cream. Canon Powershot G12, isolated on white background.


4 large egg whites
1 cup caster sugar
1 tbspn cornflour
2 tspns white vinegar
350ml light cream
I tin pineapple pieces
1 tin sliced peaches, cut into smaller pieces
4 kiwi fruit, peeled and cut into cubes.

Preheat oven 120C, line 2 large trays with baking paper.
Make sure the egg whites are cold. Beat egg whites until stiff, slowly add caster sugar, a tablespoon at a time, beat until sugar dissolved and mixture is thick and glossy. Gently fold in the cornflour and vinegar.
Draw two large circles 25cm in diameter on the paper.
Place the mixture on the paper within the circles. Bake in oven for 50 minutes swapping trays halfway.. Turn off the oven and leave meringues in oven for around an hour, or until crisp and dry.
Beat cream until thick. Prepare fruit in a bowl ready to place. Place one meringue on serving tray and spread with 1/3 of the cream, then 1/3 of the fruit mixture. Place remaining meringue on top. Spoon the remaining cream on top and then pile up the rest of the fruit. You can finish off the top with some fresh passionfruit if desired.

I have also made with with strawberries, raspberries and blueberries, topped with some fresh mint leaves for decoration.
