Chocolate Almond Slice

I am very pleased to share this recipe with you. In this months edition (september) of Woolworths Good Taste magazine i have had another of my own recipes published. I do find it amusing though that the photo shown is not me.
I hope you will enjoy making it.
125g butter at room temperature and chopped (4 oz)
45g (1/4 cup or 1 1/2 oz) icing sugar or icing sugar mixture.
150g (1 cup or 5 oz) plain flour sifted
1 tbs desiccated coconut (optional)
180g (3/4 cup) chocolate hazelnut spread eg: nutella
(or enough to spread over base
4 egg whites
155g (1 1/2 cups or 5 oz’s) Almond meal
155g (3/4 cup or 5 oz’s) castor sugar
4 drops of vanilla or almond essence.
75g (3/4 cup or 2/1/2 oz’) flaked almonds (or desired amount to go over the top
Heat oven to 180oC or 350oF
Base – mix together butter and icing sugar. Then add the flour and coconut. Stir until combined to form a dough for the base.
Spread into a 16×26cm slab pan or small square tin, line with silicone paper. Cook base for 12 mins or until golden brown.
When cooked cover base with chocolate hazelnut spread.
Whisk the egg whites until soft peaks form. Add almond meal, castor sugar and essence. Stir until well combined.
Spread almond meal mixture on top of the chocolate hazelnut spread and smooth surface.
Cover with flaked almonds.
Bake for 25-30 mins or until firm and golden.
Cool in pan
Can be served with a dusting of icing sugar.
