This easy to prepare meal is as delicious as it looks! It is one of the many recipes featured on Aspire for Life. This photo was taken by me using a Lumix DFC-FZ35 just before my hubby enjoyed this healthy lunch dish.

The NZ Institute of Plant & Food Research commissioned experts in their field to prepare a set of scientifically valid, helpful, information resources for Aspire for Life. Cooking Mentor and Dietitians compiled the Cooking section. As one of the chosen photographers for Aspire for Life, I get to prepare, photograph and enjoy this wonderful healthy way of eating with my hubby Keith. Cooking has been a passion of mine since I was 9 years old.., I was humbled to have a number of my own recipes accepted into the programme…

Aspire For Life – Brown Rice And Bean Salad

How to make brown rice and bean salad
Brown rice and bean salad G.F./D.F./ V.
Make this delicious salad to serve in the winter months when fresh salad vegetables are not so tasty or readily available. Packs well for picnics and lunches. It’s quite quick to prepare, if the rice is pre-cooked, however a resting time of a few hours improves the flavours immensely.

Serves: 6 Aspire portions per serving: 1 grain, 1 fruit, ½ legume
Preparation time: 5minCooking time: 25min

2 cups cooked brown rice
1 can of 4 or 5 bean mix
2 lemons – zest and juice
2 spring onions
½ cup fresh mint
1 cup currants
1 dessertspoon oil
½ tsp salt

Gluten Free
Dairy Free

Drain and thoroughly rinse the beans. Place in a large bowl along with the brown rice, the juice and zest of the lemons, finely diced spring onions, finely chopped mint the currants and lastly the oil.
This salad will last 2 days in the fridge.
Be careful not to overcook the rice
