I captured this squirrel eating on a pecan in the city park on 1-16-09. He/She was sitting inside a hole in the tree eating away…never even knew we were there. :o) Rhett & I were sitting in the car this cold morning killing time before Logan’s awards ceremony at school. I am so glad that we went to sit and watch the squirrels, as I got some good captures on this morning. Plus Rhett loved it!

I make this for breakfast when I want to indulge…..... / Serves 4 8 slices bread / 45g unsalted butter / 3 tbs finely chopped pecans / 2 tbs brown sugar / 1-2 tps ground cinnamon Toast the bread / Meanwhile mix all the ingredients together with a fork / Top each slice with the butter mix / Grill until hot and bubbling / Serve but allow to cool as mixture gets burning hot Tip: Go easy with the cinnamon – too much and it really spoils the flavour. Add slowly and taste test as you go!
