  • Bowl of stir fried udon noodles garnished with black sesame seeds and fresh mint with green chopsticks Karin’s Fabulous Stir Fried Udon Recipe / (or as my son’s friends used to call it when they were kids, “Fried Worms”) 1/2 package of udon or soba noodles (whole wheat or white) / 3 T tamari or soy sauce / 2 T brown or white rice vinegar / 1 T light or dark sesame oil / Red pepper flakes to taste / Sesame seeds, green onions for garnish (I used mint in the photo, because that is all I had in the house…turned out pretty tasty!!!) Boil the noodles until al dente, and then rinse under cold water. Add tamari, rice vinegar, sesame oil and red pepper flakes to the empty pot, and heat to a boil. Drain the noodles and add to the pot. Stir until liquid has evaporated and coated the noodles. Serve with sesame seeds and green onions (or mint).

  • These are rather like broad tagliatelle and I prepared the dish like this… / Roast about 10 cherry tomatoes cut in half, in olive oil with 5 garlic cloves and a sprinkle of dried chili for twenty minutes. Halfway through the roasting, add some small whole mushrooms. I used oyster, buna-shimeji and shiro-shimeji varieties. Meanwhile bring some water to the boil, add salt and the pappardelle. After 5 minutes, add a handful of baby spinach leaves and cook for a further 6 minutes. / Serve the pasta with the roasted, tomatoes, garlic and mushrooms. / Total preparation and cooking time 25 minutes.   • Probably not an original idea but one that came to me while I was making supper. I definitely have a new appreciation for those who photograph food … this was not as easy as I thought it was going to be getting those little strands of spaghetti wrapped neatly and in a photogenic way around the tines.   • Fettuccine Alla Primavera 16 Cherry Tomatoes / 1 Bunch Spring Onions / Olive Oil / 1 Tin Tuna Chunks / 1 Pinch Dried Chilli Flakes / Fresh Basil Springtime Fettuccine is made with spring onions, cherry tomatoes, olive oil, tuna and fresh basil. A small pinch of crushed chilli in the roast adds the right amount of tongue teaser. Sprinkle the cherry tomatoes and chopped spring onions with the pinch of crushed chilli, drizzle with the olive oil, swirl it round or mix with a wooden spoon to ensure everything is covered with the oil, and roast it in the oven for about 20 minutes at gas Mk 5. Meanwhile, bring some salted water to the boil and cook the pasta timed according to the package label, usually somewhere between 8 and 11 minutes. Drain the tuna and heat it in a non stick pan. Drain and serve the pasta and top with the cherry tomatoes and spring onions. Tear up some fresh basil and sprinkle it over the dish with some freshly grated parmesan. For a variation, try dressed crab meat instead of tuna. Heat it and stir it with the roasted cherry tomatoes and spring onions for a creamy pink sauce, delicious!
