Subject: Grevillea “Orange Marmalade” / Location: Roma Street Parklands, Brisbane. Formerly titled “Orange”. This is probably the most popular photograph I have taken to date, shot in late April 2005. Grevilleas are hybrid native plants which come in a large variety of shapes and sizes, from ground covers to large trees. The flowers come in a range of colors including light pinks and whites, orange, red, green and yellow and are one of my favourite subjects.

Seville oranges (prepared as you like) / 1/2 their weight in suger (different sugars will give a different colour and taste) It pays to have some experience with making jams when you make marmalade, so the best thing is to make it with someone who can show you the ropes. There’s all sorts of things to look for, including consistency and peel translucence, and it’s also very easy to overcook it. My fave way to eat this very bitter marmalade is in a fresh, warm croissant, with a hot coffee, and gorge myself silly for the whole morning :) bitter sweet heaven!
