Chunky Watermelon Salsa Bon Appétit July 1996. This cool salsa is the ideal accompaniment for grilled shrimp. Makes about 3 1/2 cups. 1 lime / 2 cups 1/2-inch pieces seeded watermelon / 1 cup 1/2-inch pieces seeded peeled cucumber / 1/4 cup thinly sliced green onions / 2 tablespoons minced fresh cilantro / 2 teaspoons minced seeded jalapeño chili / 1 teaspoon sugar Using small sharp knife, cut peel and white pith from lime. Cut lime into 1/4-inch pieces. Place in medium bowl. Add all remaining ingredients to same bowl. Season with salt and pepper. Toss to blend. Cover and refrigerate at least 30 minutes. Garlic and chilli prior to being mortar and pestled for bolognese sauce. They were crushed along with a dash of virgin olive oil, whole black and red peppercorns, rock salt and fresh basil picked from my garden. Eventually cooked and simmered slightly with a brown onion, a dash of red wine and kalamata olives thrown in the mix along with some chopped fresh tomatoes. These are rather like broad tagliatelle and I prepared the dish like this… / Roast about 10 cherry tomatoes cut in half, in olive oil with 5 garlic cloves and a sprinkle of dried chili for twenty minutes. Halfway through the roasting, add some small whole mushrooms. I used oyster, buna-shimeji and shiro-shimeji varieties. Meanwhile bring some water to the boil, add salt and the pappardelle. After 5 minutes, add a handful of baby spinach leaves and cook for a further 6 minutes. / Serve the pasta with the roasted, tomatoes, garlic and mushrooms. / Total preparation and cooking time 25 minutes. Summer is not too far away and this soup is a great way to consume that flood of tomatoes when you grow your own. Come to think of it, this tastes great anytime, so why wait? Cream of Tomato and Basil Soup 1 Onion / 4 Garlic Cloves / 1 Long Sweet Red Pepper / 12 Medium Size Tomatoes / 2 oz or 50g Butter / 250ml Chicken Stock / 75ml Double Cream / 1 Desert Spoon of Dried Basil / Some Fresh Basil / ¼ Tsp Ground White Pepper / 1 Level Tsp Sea Salt Peel and chop the garlic cloves and the onion. De-seed and chop the long sweet red pepper. Melt the butter in a large saucepan and add the onion, garlic and sweet red pepper. Cover and simmer gently stirring now and then until the onions are soft – about ten minutes. Meanwhile, cut the tomatoes in half, splitting where the stalk was. Cut out a V to remove the hard stalk remnants and roughly chop the tomatoes. Add them to the other ingredients and bring everything back to a simmer. Add the dry basil, salt and pepper, cover, and let it all stew gently for about 20 minutes stirring occasionally. Add the chicken stock and simmer gently for another ten minutes. Remove from the heat and now blend all the ingredients in a liquidiser or with an electric hand blender. Return it to the saucepan, taste and adjust the seasoning if necessary. Stir in 50ml of double cream saving 25ml for presentation. Serve with some torn fresh basil leaves and a swirl of cream. Revel in the taste, consume luxuriously then relax for ten minutes. Take the dog for a walk. Being a new member of a CSA (Community Supported Agriculture), I’m learning tons of new vegetables, recipes, and the joy of a continually happy tummy! These are garlic scapes, which are the flower stems that grow from Allium sativum (garlic) before the bulb matures. The local CSA farmers remove the scapes to push the plant’s energy toward heartier bulbs of garlic (harvested a bit later in the season). Tender, delicious, a bit milder than the hardneck varieties of garlic that produce garlic scapes … a true delicacy for any garlic lover! So far, I’ve sauteed and stir fried the delicious (and gorgeous) garlic scapes. These are going to be made into pesto … If they are available in your area, I suggest trying them in your early summer cooking. If not, enjoy their beauty visually! The bell-shaped flowers of Nectaroscordum siculum / also known as Allium bulgaricum, Allium sicilum – Sicilian honey garlic. I took this photograph in 2007 and was lucky to have it placed 1st in the plant portrait category of the RHS photographic competition 2007. I thought I would share it with you as it seemed to sum up the weather we are having in England, wet, wet, wet!
