  • Vanilla Slice 2 sheets of ready rolled puff pastry or 1 packet of Arnotts lattice biscuits / 1/4 cup caster sugar / 1/4 cup custard powder / 1 1/2 cups milk / 1 teaspoon vanilla essence / square baking tray lined with baking paper. / Mix together the sugar and the custard powder with a little of the milk to disolve and pour into a microwave jug with the rest of the milk and the vanilla essence. Cook for 1 minute lots until the custard thickens. Cool slighty with cling wrap sitting on top of the custard. / Lay 9 of the biscuits in a square tray and pour the custard on top and lay another 9 biscuits on the top of the custard. / If cooking pastry, dock the pastry with a fork and cook in a hot oven until golden and set aside to cool. Vanilla Icing / Melt 1 large tablespoon of butter and mix with some cream or milk add about 1 cup of icing sugar or mixture and stir to form a thick paste. More cream added if needed along with a good teaspoon of vanilla. / Ice the tops of each and cut / Makes 9 > FEATURED IN: / Recipes along with photos 5/june/2009

  • A block of 60s/70s flats in the heart of Sydney. When I first moved here I thought they were the ugliest things around but I have since come to appreciate them – they seem to look to a better future, though it is a future that I believe has failed to materialise, at least not the kind that the architect might have imagined. They have aged and are settling into the world. I consider this kind of architecture to be Hope for the future building. This is because I think the architects thought that they were creating a better future through this type of construction. I may be wrong.

  • Sydney Observatory, high on the hill. It is very peaceful up there and I didn’t want to come down.

  • This bridge is in the Darling Harbour area – I don’t know its name. I processed this using PhotoFiltre. Now I know for sure – Old Pyrmont Bridge.

  • Someone placed this flower upon a gravestone in St Stephen’s Churchyard, Newtown. It just seemed poignant, even though the occupant must have been there for over a century.

  • Vanilla Meringues 4 egg whites / 1 cup castor sugar (fine white sugar) / 2 teaspoons vanilla Place egg whites in the bowl of the electric mixer and beat on high speedd until soft peaks form. Gradually add sugar, little at a time. Beat for about 15 minutes until when you put some between two fingers it does not feel gritty. Pipe on to greased trays that have been dusted with cornflour using the fluted nozzle or put spoonfull on tray. Bake for 45 minutes in a very slow oven. 140oC or 300oF / Cool on trays. / >
