  • This is my other Cat Basil. :) Basil is about 18 years old now and had all his teeth removed when he was about 10. I guess with all the fuss over Jordy for the last 6 months or so, a lot of people wouldn’t realize that I have Basil and my little dog Fudge as well. Basil is a much more quiet Kitty who would prefer to spend all his time inside and sleeps at my feet on the end of the bed every single night. I guess at his Golden age … he isn’t going to go out on the town every night ;)

  • Summer is not too far away and this soup is a great way to consume that flood of tomatoes when you grow your own. Come to think of it, this tastes great anytime, so why wait? Cream of Tomato and Basil Soup 1 Onion / 4 Garlic Cloves / 1 Long Sweet Red Pepper / 12 Medium Size Tomatoes / 2 oz or 50g Butter / 250ml Chicken Stock / 75ml Double Cream / 1 Desert Spoon of Dried Basil / Some Fresh Basil / ¼ Tsp Ground White Pepper / 1 Level Tsp Sea Salt Peel and chop the garlic cloves and the onion. De-seed and chop the long sweet red pepper. Melt the butter in a large saucepan and add the onion, garlic and sweet red pepper. Cover and simmer gently stirring now and then until the onions are soft – about ten minutes. Meanwhile, cut the tomatoes in half, splitting where the stalk was. Cut out a V to remove the hard stalk remnants and roughly chop the tomatoes. Add them to the other ingredients and bring everything back to a simmer. Add the dry basil, salt and pepper, cover, and let it all stew gently for about 20 minutes stirring occasionally. Add the chicken stock and simmer gently for another ten minutes. Remove from the heat and now blend all the ingredients in a liquidiser or with an electric hand blender. Return it to the saucepan, taste and adjust the seasoning if necessary. Stir in 50ml of double cream saving 25ml for presentation. Serve with some torn fresh basil leaves and a swirl of cream. Revel in the taste, consume luxuriously then relax for ten minutes. Take the dog for a walk.   • This is page 3 of the Summer Journal…as with all my other visual Journals, it will be a record of events, meals, painting experiments, parties, recipes etc…this is a large journal much like the others, and I am looking forward to filling it up with memories…Pg 1 is all about beer, a drink which is beloved in Canada and drunk here all year long, and page 2 was Egg and Chips still in the baking pan, which can go with beer too…page 3 is you guessed it…Pizza…who doesn’t love pizza? this is fresh from the oven, cheese melting over the edge, a bit Napoletana, a bit Americana, with pepperoni and fresh basil..summer’s here and the time is ripe as the saying goes…journal page subjects are casual and unstructured…I don’t fuss or fiddle with the paintings too much and I try to complete each in one sitting, but this one took much longer...
