This composite was unknown to me, but made us think of Common Butterbur (Dutch: Groot Hoefblad). And with some research, I was able to determine this one as:
Fuki, bog rhubarb, or giant butterbur (Petasites japonicus – in Dutch: ‘Japanese Hoefblad’ ) Wikipedia
According to Wikipedia [quote:]
“it is an herbaceous perennial plant in the family Asteraceae. It is native to Japan, where the spring growth is relished as a vegetable.
The traditional preparation method for this vegetable involves pre-treating with ash or baking soda and soaking in water to remove harshness, which is a technique known as Aku-nuki. The shoot can be chopped and ｓtir fried with miso to make Fuki-miso which is eaten as a relish thinly spread over hot rice at meals.
The bulb-like shoots are also picked fresh and fried as tempura.
The plant is also used in traditional Oriental medicine for treating asthma, oxidant stress and gastric ulcer”
