My wife made these pecan & butter tarts for Christmas . She let me have one, DELICOUS! I have to wait for Christmas day to have more. Oh Lord keep me from temptation!
1/3 c butter
1/2 c golden corn syrup
1/2 c light brown sugar
1/2-2/3 c raisins & currants (or can have half of this of pecans)
1/4 tsp each of nutmeg and salt
2 eggs or1 if syrupy fill is liked
Melt butter. Add all ingredients except egg and raisings and currants. Mix thoroughly. Let misture cool then add eggs, beaten just enough to combine yolk and white. Fill tarts with your raisins and currants then pour mixture into tarts (not all the way to top or will overflow when baking). Bake on lowest rack at 350^o^ F for 10-12 min. Makes about 20 tarts (depending on your shell size).
