Garlic Scapes

These are garlic scapes, which are the flower stems that grow from Allium sativum (garlic) before the bulb matures. The local CSA farmers remove the scapes to push the plant’s energy toward heartier bulbs of garlic (harvested a bit later in the season).

Tender, delicious, a bit milder than the hardneck varieties of garlic that produce garlic scapes … a true delicacy for any garlic lover!

So far, I’ve sauteed and stir fried the delicious (and gorgeous) garlic scapes.

These are going to be made into pesto …

If they are available in your area, I suggest trying them in your early summer cooking. If not, enjoy their beauty visually!

    Thanks Helua! I grew up in a much more metropolitan area and am learning now about living more rurally, eating locally … These I think are so very beautiful. When I looked online to learn more about them, only in the States did they recently figure out that they are edible, in Europe (of course) they are a delicacy and eaten for centuries! Yes, this summer is to be full of learning of farms, other vegetables, and a happy tummy! HUGE HUGS, Em

    Thanks so much Tracey! If you grow a hard neck variety of garlic, these will sprout up early in the season – trim the scapes off and EAT! Then the garlic bulb itself will have more energy directed toward its growth for harvesting a few weeks later. Happy garlic growing … and kudos again on your book cover! Best, Emily

    Beautiful work Emily. Very creative! I recently began a new job at a local natural and Organic Food Co-op in Concord, NH and have just started learning all about the wonderful organic foods that are grown locally. As with Wellspring Farm, our Co-op is also community supported. If my memory serves me correctly, our produce comes from local farms in both NH and VT. I’ll have to check and see if it is any of it comes from Wellspring Farm. Great shot! Len

    Thank you Len. You live in your capitol too. We have a Co-op where I’m a member and shop … do you like working there? I think I most definitely would! Our Co-op just expanded its space, is yours very large? Do you also do the Community Supported Agriculture in your area? I’m not very familiar with New Hampshire, so I don’t know how “rural” it is and if you have many farms. Thanks so much for taking the time to look and comment … here’s to local organic eating!
