Mama's Okra Gumbo

MAMA’S OKRA GUMBO
(It’s not really gumbo, but that’s what my grandmother, “Mama”, called this dish she used to make for everyone. Gumbo is more of a soup or stew type dish with some of the same and additional ingredients. I keep calling it gumbo for sentimental reasons. Every time I cook this dish, I think of my grandmother who passed away in 1990.
1 large bag frozen battered sliced okra
1 medium onion, chopped
1 clove garlic, minced.
1 can stewed tomatoes, chopped
1 can corn, drained
salt/pepper to taste
Heat a large iron skillet until very hot. Pour about 1/2-inch of pure vegetable oil into skillet. (if you want to cook it REAL Southern, use bacon drippings instead of oil.) Let oil heat up for about 3 or 4 minutes. Add okra, onion and garlic; toss to coat all pieces with oil. Cook on medium-high heat until brown, stirring and flipping pieces often with a spatula. Drain on paper towels. Discard any extra oil.
Return cooked okra to the skillet. Add tomatoes, corn, salt and pepper. Cook on low-medium
heat, stirring often, for 15 minutes. Serve immediately.

oh,, I forgot too say, I do cook CHICKEN GUMBO,, learned how too make it when I lived in S.Carolina, my mom who is a true Yankee,, begs for this soup when I make it,, the secret ingression,, is the okra..she still claims she cant make it,, I think its just her excuse of being spoiled and I make and she receives,, LOL,,

when I lived down south, I never in a million yrs.. thought I would eat grits, collard greens,mustard greens cooked in fat back,, gumbo,, fried catfish,, my children crave these luscious foods as they call them now that we are back north,, took me two yrs.. to find a store that sold grits,, they are all good food with great memories for me of my awe of what are you talking about??? yummm

You’re making me hungry now girl….BUT I detest greens! Yes, I’m a southerner who hates greens, especially turnip greens! phewy! lol….that’s about the only southern food I just won’t cook or eat. Let me rustle you up a plate of seared ham steak with red eye gravy, some sweet potato casserole and hot homemade yeast rolls! YUMMMMMMM!

OH,, MAN, now you got me salivating,, esp, ham and red eyed gravy, another one my mom loves me too cook for her,, ok,, thats it,, gotta go find something too munch on now,, was a good girl and stayed away from all the halloween candy,, I am craving sausge eggs and biscuits now,, what to hay,, its 12:48am my time,, hmmmmmmmmmmmmmmm,,, breakfast anyone,,, sweet dreams,, I know what I am doing now,,

ha ha….I was thinking the same thing! My husband is in there raiding the fridge right now. I hear the microwave, so he’s heating up something leftover from our dinner I bet. lol….have fun!

Oh WoW!! Looks very delicious. I must try this. I think let me have my diet plan as next year resolution till then enjoy!! LOL…Let me suggest one recipe. Slit okra along the length. Fill dry mango powder, salt to taste, little paprika and coriander seeds powder. Shallow fry till become crispy. Serve hot as snacks.

Use lite cooking oil and this is not as fattening. lol….at least it’s a veggie dish! :)
I’ve not heard of dry mango powder. I’ll have to check into that and try it out. Thanks for sharing.
