Warm Herbed Sesame Dressing:
1/3 cup sesame oil
2 tbl Olive oil
1/4 cup corn oil
1/3 cup wine vinegar
2 tsp soy sauce
1 tbl lemon juice
1/4 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
1/2 tsp pepper
Salad:
1 (10 ounce) bag of spinach
1/2 cup finely julienned carrots
1/2 cup finely julienned snow peas
1 1/2 cups bean sprouts
6 oz firm tofu, cut into 1/2” cubes (about 3/4 cup)
1 egg, beaten
3/4 cup dry bread crumbs
1/4 cup clarified butter (or vegetable oil)
OPT: 1 tbl toasted sesame seeds, as garnish
Combine dressing ingredients until well homogenized.
Heat in a saucepan and keep warm, but not too hot.
For salad, wash, stem and tear the spinach into bite-size pieces. Spin dry or wrap in dish towels to dry. Have the spinach, carrots, snow peas and bean sprouts ready in a mixing bowl. Heat the butter or oil in a sauté pan. Dip the tofu cubes in the beaten egg and then into the bread crumbs. Saute the tofu in the butter (or oil) until crisp and golden. Remove the cubes with a slotted spoon and immediately add to the salad, along with the warm dressing. Toss quickly, divide among salad plates, and serve at once. (serves 6)
