Spaghetti alle vongole – baby clams, is my all time favourite dish!
I serve them up adorning the pasta like gorgeous jewelled butterflies after they have been gently steamed open in a sauna of olive oil, garlic, chilly lemon juice, a very generous swig of white wine and parsely. Releasing their salty sea flavourings as they open is what makes this dish a seafood delight – simple clean flavours with a hint of heat!
