Did you say Sunday breakfast? Oh my, I would have to get up much earlier then, because to feed them (and myself!), I need many many pancakes… ;) Or maybe I should buy one more pan???

I’ve favorited this so if I’m ending a late night bubble session and feeling hungry I can find this stack of delicious looking pancakes and know whatever I’m going to find in my kitchen just won’t measure up. I hope I’ll just go to bed smiling for what might be tomorrow.

Oh, it looks like I need to inspect some stores to find out what is it about ;) That would be practical, for sure, ‘cause my children are in crazy love with pancakes (so am I and my husband ;)), but I usually buy them to have something quick when needed – looks like a big sin, doesn’t it? Normally, I love making my own pancakes, they are so much more delicious than the bought ones, but it takes > 1 hour to get enough of them just now! Thanks you :)

You can get them rectangular or round…they are electric and non stick…so make up your batter, and in no time you have 12 or more perfect pancakes….I hope you can get them where you are…here they are in all the cook ware stores and dept stores…

2 cups all-purpose flour
1/4 cup sugar..you can use less sugar if you like
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs (at room temperature)
2 cups buttermilk or regular milk, but butter milk makes it great
1/4 cup melted unsalted butter (allowed to cool down) or canola oil
1 cup blueberries (fresh or frozen)
Directions
1 Please note that you’ll also need additional unsalted butter to grease your skillet (you could also use nonstick cooking spray like Pam; I did some with butter and some with Pam and all worked fine and tasted great).
2 In a large mixing bowl, sift together the flour, sugar, baking powder and soda, and salt (I do this through a sieve, not with a sifter).
3 After melted butter has cooled down, beat the eggs with the buttermilk in a separate bowl then whisk in the melted butter.
4 Using a wooden spoon or a spatula, add the wet ingredients to the dry ingredients and combine just until you have a lumpy batter; do NOT overmix.
5 Over medium-high heat, heat some butter in a large skillet (best to use a griddle, of course).
6 For each pancake, use a generous 1/4 cup of batter; after spooning batter into skillet, sprinkle top of each pancake with blueberries and press them in slightly.
7 You may want to have some extra blueberries on hand, in case you run short.
8 Cook each pancake for approximately 2 minutes per side; the length of time will depend on how hot you have the heat, how well your skillet retains the heat, etc.
9 Keep pancakes warm in a low oven as you make them, then serve; best when served with real maple syrup.

Oh my Janis, I get fat just looking at your yummy treats! MMMM one of my favs, blueberries and pancakes! Love how you stacked the different shapes with that one blueberry perched on a maple syruped ledge! And having all those little blueberries roll around the edge of the plate was inspired as well!

Yes, I’d want to have some, but their is no supply here in this time of the year :( But OK, I’ll use our home-made grape jam, children love it :)

Can’t you get frozen? it works just as well…I don’t know about grape jam as I have never used it…it might work as a topping after the pancakes are finished an on the table…the blueberries cook when you turn over the pancakes on the griddle…
