Though this area of the Catskill Mountains at one time had a chicken farm on every road, those remaining are now in a shambles, in a state of decay, the chickens have long been sold off, and the Chicken Farm industry is nill…or so I thought when I stumbled upon this farm yesterday which actually had live chickens in the coops peering out at me!
The statement below may have come from Henry IV, but it surely became a slogan in the 1920’s of the Catskill Mountains of New York! It was here Chicken and Borscht was served at every meal!
