The fifth taste. I thought we were doing OK with the original 4, but we have apparently been given a new on. It’s not really that new, because people have been trying to get it recognized as an official taste since the early 1900’s.
What the umami taste actually is, is kind of hard to grasp at first. The dictionary says that umami is.. “a taste sensation that is meaty or savory and is produced by several amino acids and nucleotides (as aspartate, inosinate, and glutamate)”. My, how clinical can you get. But, I can’t figure out a much better way to explain it.
The umami taste can be found in all kinds of foods, from many different parts of the world. Umami burgers seem to be the rage now, and I see restaurants that specialize in them popping up all over the place. I am hoping that one opens up in Bangkok, because there are few things in this world that I like more than a good burger. Even if it does have nasty fish sauce in it.
