Thank you too Chasity :) It’s done with layers in photoshop (as you probably guessed!). On one layer I converted to black and white, then on the next I carefully selected the leaf and erase it back to the coloured layer – fair bit of eraser work. There is possibley an easier way, but I’m still learning the tricks of the trade! Then the usuals of saturation, levels, etc. Thanks for your interest !! :D
