Let me take you on a journey through dahl, beautifully finished with an aromatic tarka, pungent with asafoetida, toasty cumin seed, a whole dried red chilli and sliced shallots all bathed in warm ghee and poured on at the last moment…..

    I bow to you, Queen of the Legumes. I made an amazing new soup recently of broad beans, zucchini, masses of italian parsley all drizzled on with lemon-and-thyme -steeped olive oil. You see how I aspire to leguminosity!

    I confess to frozen. I tried making a dip out of dried, and they took about 3 years to cook. Fresh are my favourites – small ones popping out of the pods!

  • I was thinking it would be early for fresh! I Iike new little ones too- dried fava are not something I have warmed to yet either -although it has been a long, long time since I cooked them, and I think I would do it better these days! I’ll tell you how I go!
