Soft poached eggs with ham on a muffin, smothered in hollandaise sauce. Canon G12
Poach two eggs in saucepan, pull apart your muffin into two pieces then toast. Place a slice of ham on hot buttered muffin, then eggs.
Place 3 egg yolks in a heatproof bowl over a pan of simmering water (don’t let bowl touch water). Whisk until light, then slowly drizzle in 6 tablespoons of melted butter, Whisk continually until mixture thickens, then season with salt and white pepper. Stir in 1 tablespoon of lemon juice and serve immediately.
