Roses are edible… their petals are great in a salad… their buds (Rose Hips) are also edible, and best if harvested after the first frost. They are known for their incredibly high content of vitamin C it is said that 3 or 4 Rose Hips contain much more vitamin C than an Orange.Wild Rose Hips (wich look a little different than those) were given to the “white Man” by Native people in America… This is what saved the settlers from scurvy, for scurvy is a vitamin C depletion disease.
Wonderful juice, jam and syrup can be made of these. They can be candied, made into butter, adn even make catsup out of it.
Caution though… inside the Rose Hips, there are tiny “hairy” seeds. You do not want to eat them… not because they are toxic, but because one will get an “itchy bum” when it gets at the other end… ;)
