Moist Molasses Bran Muffins

1 C Bob’s Red Mill Wheat Bran
1 1/2 C whole wheat flour
1/2 C raisins
1 t baking powder
1 t baking soda
1 C milk
1/2 Molasses (or honey)
3/4 C applesauce
1/4 chopped nuts (optional)
2 T oil
2 eggs ( beaten)

Preheat oven to 400 F.
Combine wheat bran, flour, baking soda and baking powder. Stir in nuts and raisins. In separate bowl, blend applesauce, milk, molasses, oil and egg. Add to dry ingredients and stir until moistened.
Spoon into greased muffin tin (or paper muffin cups). Bake for 15-20 minutes. Makes 12 muffins.

    Oh, my! this sounds so good, and not hard ….I love bran muffins but they are usually dry-crumbly and that’s no fun!
