One of my favorite dishes is vegetarian egg rolls. When I was younger I always approached this recipe as somewhat overwhelming and time consuming; but worth it.
A couple years ago when our son was home from Norway for Christmas; we purchased all the ingredients, came home, he put on some music and without thought we prepared the egg rolls.
Maybe it was the music, maybe it was having Tyler home for the holiday. Maybe it was because for the first time it was not a task that required a “deadline”. Maybe because I am no longer “younger”.
