Wheat is a grass with a very swollen grain. Along with rice, it is the world’s most important crop for human food with the UK producing about 15m tonnes of wheat each year and about seven million of those are used for human consumption in bread, breakfast cereals and distilling. The rest is used for animal feed with UK flour millers use over 5m tonnes of wheat per year, most of it grown in the UK, to produce over 4m tonnes of flour. This is used to make bread, cakes, pizzas, starch, confectionery, soups, sauces and many other foodstuffs

The UK is essentially self-sufficient in wheat but it imports some varieties, and exports others

Most planting is done between September and December, with the crop harvested between July and September
