My husband’s favorite…………………… my home made Peacan Tarts

WHAT YOU NEED:
For the CRUST –
8 ounces CREAM CHEESE ( i used Philadelphia original)
2 & 2/3 cups ALL PURPOSE FLOUR
2 & 2/3 sticks BUTTER (not cups)

-blend cream cheese & butter together
-gradually add flour
-blend into dough
-pop the dough in the fridge while you make the filling

For the FILLING –
6 TBS butter
6 eggs
3 &3/4 cups brown sugar
3 dashes of salt (a dash is a little finger sprinkle)
1 &1/2 TSP pure vanilla extract
1 &1/2 cups toasted chopped peacans & pistachios
(optional)

-begin by chopping & toasting the peacans
-melt butter in a non stick pan
-sprayed the pan with PAM
-add the eggs
-add dashes of salt
-add vanilla
-heat this mixture only until well blended (Don’t boil!)

1. Preheat oven to 350 degrees
2. Scoop out little balls of pastry dough
3. Press them down and up the sides with your thumb
4. When the pastry tarts are ready…………….
5. Fill each tart less than 1/2 full with toasted chopped peacans
6. Fill each tart with filling until almost full
7. Pop in the oven
8. Bake at 350 for 15-18 minutes
9. Reduce heat to 325 degrees
10. Bake for 10 more minutes
