My home made apple pie – ENJOY!!!!
WHAT YOU NEED -
For the DOUGH: 1&3/4 cups flour, plus more for dusting
1 stick cold butter, cut into 1/2 inch pieces
1/2 tsp salt
3tbsp veg. shortening and 3tbsp cold water
For the APPLE FILLING: 3 apples, peeled and sliced; 1 tsp cinnamon; pinch of salt, 2 tbsp fresh lemon juice, 3/4 cups sugar, 1/2 stick butter & crashed graham crackers.
To make DOUGH: Mix flour and salt in a large bowl. Cut in shortening using fork until mixture resembles coarse crumbs. Add water, 1tbsp, at a time, mixing lightly with fork until flour mixture is evenly moistened & clings together when pressed into a ball. Divide the dough in half into 1/2 inch thick round. Wrap each dough in plastic wrap then refrigerate for 30 minutes.
TO MAKE APPLE FILLING: Peel, halve & core the apple. Cut each half into 6 wedges & toss with sugar, lemon juice, flour & cinnamon in a bowl. Cook the apple mixture in a skillet over medium-high heat, stirring occasionally, 8 to 9 minutes. Remove from the heat, cool completely and refrigerate.
MEANWHILE, roll dough with rolling pin to flatten slightly, working from center of dough to the edge. Turn over,continue rolling until dough round is about 2 inches larger than diameter of inverted pie plate. Then press dough evenly onto bottom and up side of the pie plate, being careful not to stretch the dough, Trim any dough hanging over edge of pie plate with sharp knife. Then fill with crashed graham crackers at the bottom and with apple mixtures, set aside. Roll out remaining dough as directed, cut and place over filling. Fold edge of top crust under edge. Brush with egg yolk and sprinkle with white sugar.
BAKE for 45 to 50 minutes on 350 or until juices forms bubbles that burst slowly. Cool and serve.
I put a whipped topping and fresh strawberry and blackberries. Sooooooo YUMMY!!!!!
