She Crab Soup
Chesapeake Bay She Crab Soup
4 Tbsp, butter, melted
1 small onion, finely chopped
3 Tbsp flour
2 cups light cream
2 cups milk
1 pound Blue Crab she-crabmeat
Orange roe
2 Tbsp Sherry
Salt and Pepper to taste
-Saute onion in butter until translucent. Stir in flour.
Add cream and milk; simmer 5 minutes over medium heat.
While the soup is thickening, toss the crabmeat and roe in
butter and heat through a few minutes.
Once the soup has thickened,
Add crabmeat, roe, Sherry, and seasonings. Heat through.
the Crab’s version:
Substitute any delicate, fleshy meat.
Strain attachments.
