Cupcakes again, but this time these are Mojito Cupcakes.

These suckers took awhile to make, but were well worth it. Again, you can find the recipe by simply Google-ing it.

But they are infused with fresh mint and lime flavors, and contain a shot of Rum/Lime syrup inside. I made what turned into just a sugary glaze on top, and decorated with a single mint leaf.

  • I’m pretty sure this is the recipe I used. There are a few online, but they’re all fairly similar. This one has the syrup that gets injected into them.

    YEA! Just voted for it out of 70… a hard choice after chocolate on V day…But WORTHY! :?) ! And to be honest! It inspired me ….my imagination! I thought it was a coconut creamed rice baked in a cupcake paper with some chicken? curry on top!?!?!? Can you believe?! Your recipe looks like it tastes pretty good, tho The snapper almost got my vote! Must’ve been the desire for savoury!
