YUM!!! I cannot share my recipe.. given to me by an Alaska Native… I can share with you that I do what’s called a wet brine as opposed to a dry brine.. brine in brown sugar and salt with secret spices, dissolved in cold water, for 24-48 hours, put on racks to glaze (dry) for 6-9 hours, then smoke for several hours with alder chips.

Set the plate on top of the sink cause the sun was setting behind the mountains but still barely streaming in that window… set up the tripod… worked ’n worked the settings… had to hurray cause there was a crowd waiting to scarf down my subject matter!! lol! ;)
