Fresh WILD Alaska Smoked King Salmon by

YUM!!! I cannot share my recipe.. given to me by an Alaska Native… I can share with you that I do what’s called a wet brine as opposed to a dry brine.. brine in brown sugar and salt with secret spices, dissolved in cold water, for 24-48 hours, put on racks to glaze (dry) for 6-9 hours, then smoke for several hours with alder chips.

Only slight tone curve adj. to bring up the lights in Lightroom.

Sometimes I can it in glass jars after smoking but it doesn’t seem to travel all that well no matter how well I pack it!! Set the plate on top of the sink cause the sun was setting behind the mountains but still barely streaming in that window… set up the tripod… worked ’n worked the settings… had to hurray cause there was a crowd waiting to scarf down my subject matter!! lol! ;)
