Recipe : Saute leeks in clarified butter, tell they retain a shine and are some what transclucent, now deglaze with lamb stock add herbs in bouquet garnet,
when it comes to a simmer whisk in the cream. Leave for 1min then slowly whisk in your wool slowly as to prevents clumps while it thickens. when this step is done you are nearly there. Remove bouquet and garnish with mini Black sheep and season to taste
