2 sheets of ready rolled puff pastry or 1 packet of Arnotts lattice biscuits
1/4 cup caster sugar
1/4 cup custard powder
1 1/2 cups milk
1 teaspoon vanilla essence
square baking tray lined with baking paper.
Mix together the sugar and the custard powder with a little of the milk to disolve and pour into a microwave jug with the rest of the milk and the vanilla essence. Cook for 1 minute lots until the custard thickens. Cool slighty with cling wrap sitting on top of the custard.
Lay 9 of the biscuits in a square tray and pour the custard on top and lay another 9 biscuits on the top of the custard.
If cooking pastry, dock the pastry with a fork and cook in a hot oven until golden and set aside to cool.
Melt 1 large tablespoon of butter and mix with some cream or milk add about 1 cup of icing sugar or mixture and stir to form a thick paste. More cream added if needed along with a good teaspoon of vanilla.
Ice the tops of each and cut
