Vanilla Slice

Vanilla Slice

2 sheets of ready rolled puff pastry or 1 packet of Arnotts lattice biscuits
1/4 cup caster sugar
1/4 cup custard powder
1 1/2 cups milk
1 teaspoon vanilla essence
square baking tray lined with baking paper.
Mix together the sugar and the custard powder with a little of the milk to disolve and pour into a microwave jug with the rest of the milk and the vanilla essence. Cook for 1 minute lots until the custard thickens. Cool slighty with cling wrap sitting on top of the custard.
Lay 9 of the biscuits in a square tray and pour the custard on top and lay another 9 biscuits on the top of the custard.
If cooking pastry, dock the pastry with a fork and cook in a hot oven until golden and set aside to cool.

Vanilla Icing
Melt 1 large tablespoon of butter and mix with some cream or milk add about 1 cup of icing sugar or mixture and stir to form a thick paste. More cream added if needed along with a good teaspoon of vanilla.
Ice the tops of each and cut
Makes 9

    Hi Joy,
    Great recepie however it’s easier to go to Glick’s Kosher Cakes in Carlisle Street for the worlds best European style Vanilla slice.

    Looks yummy, but need to ask questions. Is castor sugar regular granulated sugar? Is custard powder a cooked pudding powder? -bookmarked-—forgot to congratulate you on your features on your recipe cards--Big Congrats :-) Norval

    We have a more grounded down sugar called castor sugar. if you have a food processor use that for a minute to grind the sugar a bit. If not your normal granulated sugar will do. Our custard powder would have corn flower in it as a thickening agent. Not really sure what your cooked pudding powder is. It may be the same. Is it yellow and do you mix it with milk and sugar or do you cook it in the oven to get a pudding. If yours turns into a pudding its not the same.

    Thanks Joy, I will use the food processor, they have the finer sugar, it’s called bakers sugar here and is hard to find. The pudding mix for cooked pudding here is yellow but you don’t add sugar, just milk, and you cook it on the stove top or microwave to thicken. It is made with cornstarch.—didn’t find the chocolate almond bars, probably just overlooked the like I amost did with the Orange loaf.

    Great shot Joy,, now Im going to make some.. another one of the things I miss about home are the pastries, we have so much more better ones back home.. I miss going to the local bakery, to buy a pasty and vanilla slice or kitchener bun..

    No we dont.. I love to cook also.. every summer my hubby and I cook for our local minor league baseball team.. I make jelly slice( one of their favourites), pav’s, ,, We have a few places here where you can get some nice pastries, but nothing comes close to what we have back home.
