This is a traditional way of cooking here in the Middle East where people dug a hole in the ground, put charcoal, light it up, and began cooking slowly. The food always turns out delicious.

Thou it may sound not too gourmet, I had the pleasure of eating from such cooking method, and it is so delicious. It’s the modern equivalent of slow cooking on low flame where meat and vegetables turn out soft, rich and most tasteful. Thanks for sharing this image with the Art of the Middle East group.
