I made these pancakes for Sunday breakfast. Served with berry jam and cream, they were quite delicious.
My recipe:
2 eggs
1 cup plain flour (I used wholemeal)
1 cup milk
2 tblsp sugar
1/2 tsp grated lemon zest
pinch salt
Whiz all these ingredients together in a jug, that way the mix will be easy to pour. The mix should be of a runny consistency, not too thick – add more milk if it is.
Heat a flat bottomed pan (I have a dedicated pancake pan) over medium heat. Spray with cooking spray (or use a little butter) and pour a small amount of batter in, about half a cup at a time. Tip pan to spread mixture.
Cook for a minute or so until bubbles appear on the surface. Flip or turn pancake with a spatula and cook for another minute or so. Be careful not to burn them, they don’t need much cooking as they are so thin.
Repeat process till pancakes are all cooked. I keep mine on a plate over hot water till they are all done. Serve with good fruit jam, and cream…enjoy!

Yummy!!!, I use a filling of cottage cheese mix with lemon rind, 1 tsp. sugar.. Roll them up and serve with REAL Maple Syrup….Jules
