THAT’S WHAT I’M TALKIN ABOUT BABY….

My favorite cassarole of all…..I will give story & recipe…later.

KING RANCH CHICKEN

2 cans of cream of chicken soup
(or exchange 1can for 1 can cream of mushroom)
2 cups chicken broth
1 can Rotel tomatoes
( or 1 Cup diced tomatoes)
20 (approx): white corn tortillias
3 Lg. chicken breasts
1 Lg. onion ~ chopped
1 med.green/red pepper ~ diced small
1 Lg. pkg. shredded Mexican cheese
-mix liquids
- pre-bake or boil chicken breasts
(season salt/pepper ,bay leaf, garlic)…
when tender,cube/dice about 1/2 half inch
-cut tortillias in half
(to begin place in bottom,overlapping edges)
-spray baking dish w/Pam or grease pan w/olive oil
-Layer:tortillias,chicken,onion & peppers,1/2 liquids,1/2 cheese
-repeat:tortillias…..
-Bake UN-covered @350 degrees for about 1 hour

*Serve with avocado slices,sour cream,

(and jalapenos’ ala cart for the ’’hotties’’)
*Can run under broiler for a hot flash /if you like a crunchy cheese tops
~ Lemonaid(me),mojitos…margaritas……..???
tip: ALWAYS better the next evening…so save some(hide it!)
