Capsaicin (8-methyl-N-vanillyl-6-nonenamide) is the active component of chili peppers. It is an irritant for mammals, including humans, and produces a burning sensation in body tissues with which it comes into contact with. Capsaicin is a common ingredient that makes food taste hot and spicy. Many people experience pleasurable and even euphoriant effects from ingesting capsaicin, as a result of pain-stimulated release of endorphins.
