cook and drain fresh broccoli florets in vegetable broth until tender and bright green, add minced garlic, shallots finely chopped, pink peppercorns, oil and vinegar, parmesan cheese, cherry tomatoes and a bit of salad cream. Serve lukewarm with your choice of fish or meat or with pasta, rice or potatoes.

  • for me broccoli has got to be bright green, if you get it any other colour (often cooked to death and grey) it is a disappointment
