Pumpkin Soup ~ a great recipe for Halloween & Thanksgiving
4 Tbsp. unsalted butter
4 cups pumpkin (cooked & pureed)
2 cups cooked pureed sweet potato
1 cup peanut butter/can also be substitued by coconut cream
6 cups chicken stock / 1 tsp ground black pepper / 1 tsp salt
snipped fresh chives & sour cream for garnish
Melt butter in a soup pot over medium heat. Stir in the pumpkin, sweet potato & peanut butter or coconut cream. Add the stock, pepper & salt and stir well until smooth. Reduce the heat to simmer and cook for 20 minutes.
Garnish the soup with chives & sour cream. Enjoy!!!
