Rosella Jam “ Rosella is from the Hibiscus Family
Tested & true 4..06..2008

500 grams rosella fruits, seeded
Keep seeds…
250g (a1 cup) white sugar
1 lemon cut in quarters
Water enough to cover seeds & lemon

Cooking Instructions
Cover the seeds & Lemon in large saucepan & simmer until tender.
Strain through large sive into saucepan & add the red husks
Then simmer for 45 minutes or until tender.
Add same amount of sugar, you can measure with a cup.
Cook until it sets on a spoon/plate.
Bottle & allow to cool.
{pour into hot, sterilized jars, seal when cold}

    Many thanks for the recipe. i have about 6 kgs sitting in the freezer. I lost the recipe .a while back .

    Glad to be of help, Jack01. It differs from the usual one that uses apples and no seed. I will have to write up my lemon & orange marmalade, and the seeds are important. I have masses of paw paw, any ideas? I have an old W.M.U. Cookery Book which was sold to raise money for Qld Presbyterian Missions dated 1961. But most recipes differ somewhat to my own, as I use it as a guide rather than a rule book.
